Does that sound like an oxymoron to you?
Is it because you think the only healthy thing you can “cook” is a salad?
Well ILKB members from all over the country are here to tell you that you’re wrong. Totally wrong.
In fact, get your cooking tools out.
Because it’s time to learn that healthy recipes do exist (and taste delicious too!).
Since March was National Nutrition Month, we asked ourselves, “How can we get more people motivated to cook healthy food at home?”
After all, abs are made in the kitchen.
What I mean by that is that to achieve the goals you want (and no, it’s not all about getting a 6-pack!) you must combine a steady workout routine with healthy eating habits.
You can’t go to the gym three times a week only to eat a whole pizza when you get home and expect the scale to go down in numbers.
It’’s just not going to happen. (As much as I wish it would!)
But we also know that the cooking part of the equation is sometimes the hardest and even scariest part.
Where do you start, right?
So we thought, “Let’s have some fun with it! Let’s make it a contest with awesome prizes.”
(I mean, who doesn’t like to win stuff?)
We asked our ILKB members to share their favorite healthy recipes.
They’re normal people like you and I. Not world renowned chefs (that we know of).
And that’s the most important part.
This contest proved that anybody can truly crush it when it comes time to living a fit and healthy lifestyle.
All you have to do is give it a try.
So here it is.

Chicken Zucchini Poppers
by ILKB Member Elaine Serus Baran!
Elaine said this about her recipe:
“I love these! Fresh veggies, so easy, and they are SO good for you! I’ve seen this recipe many places online, but this is the way I make it- Hope you love them too!”
It’s so easy and takes about 15 minutes to make.
That’s less time it takes for your takeout to be delivered.
Get your apron on. It’s time to make a delicious (and healthy!) meal.
1 lb ground chicken breast
2 cups grated zucchini (you don’t even taste it)
2-3 green onions (chopped and diced)
3-4 TBSP cilantro
1 clove garlic (minced)
1 tsp salt (optional)
1/2 tsp pepper
3/4 tsp cumin
Step One: Mix all ingredients together:
Step Two: Over Medium heat, warm up 1 tablespoon of coconut oil
Step Three: Take one large spoonful of the mix and place in frying pan over medium heat.
Step Four: Flip after 5 minutes. Cook for another 5 minutes.
*Can be baked too!
Easy enough right?
Good because there’s more to come.
Stay tuned as we will be unveiling a new recipe on the blog every week.
Oh and after you’ve enjoyed your meal, leave a comment below for our recipe winner.
I’m sure she would love to hear how much you loved it!
